Self-made smoothies are a perfect breakfast for everyone who like to give yourself a treat.
A lot of people asked me a lot of questions about my smoothies. I was really surprised about the big interested in how I make my breakfast smoothies. So I am really happy to share my experiences with you.

1. Do you get really replete by drinking a smoothie?

Most of the people are really thinking drinking a smoothie can’t make you replete until lunch time. Sure, it depends on what you are use in sour smoothie. If you are only use water, a salad leaf and an apple you will never get replete until lunch time (about 4-5 hours). But if you add nuts, seeds, chia seeds or coconut milk you will get full for sure. I don’t calculate my smoothie on calories, I normally eat until my stomach said stop. But a friend of my calculate one smoothie from me and came to 500-600 calories per jar. So in this case I drink one big smoothie in the morning and eat normal lunch 4-5 hours later.

2. What are the best ingredients for a perfect smoothie?

If you like to keep you full for longer you need to add nuts or seeds to your smoothie as well. I prefer soaked cashew nuts because they have a light nutty taste. Oats or soaked buckwheat are also a great smoothie ingredient. Soaking the nuts, seeds, grains or buckwheat overnight makes them more digestible. If you like only to provide your body with amazing healthy vitamins and minerals you can also drink a “light” perfect smoothie (only water and some fruits or greens) here and there. My preference is to use a smoothie as a breakfast so my smoothies are really substantial. I try to bring a big variety in my smoothies during the week. Sometimes I only make fruit smoothies, sometimes I mix up some kale or spinach with a banana and mix it up. Most of the people who saw my Kale smoothie talking about it: “Kale in a smoothie? That couldn’t be delicious!” Trust me! It is. Because I don’t mix up ONLY KALE. It is the combination of kale, natural sweetener like dates, some fruits and milk. Why not use greens in a smoothie to get a big burst of vitamins and minerals to start in the day?

3. What fruits are the best for making a smoothie?

The biggest tip I read in the last years was to freeze bananas. Because it is so hard to have perfect ripe banana at home all the time. I freeze them peeled in cubes when they are on the best point. Pick them up directly from the freezer is such a benefit because the smoothies get cold after mixing. I also freeze kale to have it during all seasons at home. So bananas are really really the best fruit for a smoothie. I often mix up banana with other fruits. Banana makes a smoothie also more creamy as an apple. I also often use frozen berries which I combine with ingredients to make a smoothie creamy.

4. Can I really add vegetables or greens in my smoothie?

To use a smoothie to eat more vegetables during the day is such a great idea! I need to learn who to add greens and vegetables to get a smoothie I really like to drink. Because drinking a smoothie which taste like a zucchini is not my favorite. My perfect smoothie need to be sweet. So my trick is only to add some leafs or a piece of zucchini. You don’t taste it but you get all the healthy benefits. It works really good! Greens are the best source of secondary plant substances and chlorophyll which are so healthy for your body.

5. What do you use to get a creamy smoothie?

First of all: Don’t use to much liquid. Whatever you use! Don’t use to much! There are a few tricks to get a creamy perfect smoothie. First one is to soak nuts, seeds, grains or buckwheat overnight. Second is to use ripe bananas and third is to use nut milk instead of water. Fourthly is to add avocado because avocado is one of the creamiest fruit on the planet. And my last tip is to use a good blender to mix it up. I started with a good blender but since I have my Vitamix my smoothies are on the top of creaminess.

Nutmilk vs Dairy Milk – which one is more healthy?

A lot of people asked my why I stopped drinking dairy milk and started drinking nut milk instead. The most of the people who drinks dairy milk don’t know what it really means. Like me! I never know about the immoral aspects of drinking milk. Dairy milk was a big part of my diet. Since I change my consumption I feel so much better. Nobody need dairy milk in my opinion.

The first reason to stop drinking dairy milk was the animal abuse. I don’t like to support any animal abuse with drinking milk. Sure I never hurt a cow by myself by drinking milk but it feels like I hurt it by myself. I really felt bad after reading lots of animal reports about the housing conditions of conventional milk cows. I never know it! Did you know the calves are moved within a few hours after birth? Because we like to drink dairy milk?

The health facts of dairy milk are not that high as many people thinking. Did you know that many scientific studies have shown an assortment of detrimental health effects directly linked to milk consumption? The story about the health benefits has spread around the world based on the flawed belief that this calcium-rich drink is essential to support good overall health and bone health. But that isn’t true. I am sure you will find the same answers if you are starts to read more about the true health benefits of dairy milk. The industry are ruthless! They earn money because people like me don’t know about the truth.

Cows are intelligent and brisk animals. They suffer when they need to produce too much milk. They need to milk 50 Liters a day instead of the normal 8 Liter. You don’t need to be clever to recognize the animal abuse. Apart from this my heart is broken by recognizing the calves suffer. The calves are moved within a few hours after birth. That’s a shame. I feel co-responsible by drinking milk.

Nutmilk ist better. I experienced about the negative health aspects of drinking dairy milk. Here are some Facts:

• A lot of scientific studies have shown an assortment of detrimental health effects directly linked to dairy milk consumption
• Today’s milk is a processed food and not a natural product
• A lot of the vitamins get lost by pasteurizing the milk
• Antibiotics are used on many farms to treat infections. This Antibiotics remains in the dairy milk. Our body don’t need antibiotics.
• Dairy milk is often contaminated with lots of heavy metals and Dioxin.

Sure dairy milk also have some positive benefits. But a lot of negative ones. So why should we drink milk?
Only because it’s tasty? That’s reason is not enough for me so I decided to use Nut Milk.

What is your tip for others who like to live more „plant based“?

Maya:
“I think that it’s important to go slowly and incorporate plant foods switching it with animal ones, discovering your new favorites on the way. Trying to change things overnight can be too much sometimes, and lead to feeling deprived and unhappy. Plant food is so abundant, the riches is amazing? You just need to discover it slowly and you will be happy and satisfied. One more thing I advise: do not try to substitute things: seitan is not meat, nor tofu is cheese. Plant milk doesn’t taste like cow milk and you shouldn’t expect that. Except the new things (plant food) for what they are, delicious and nutritious food that you will love once you learn to prepare it. So much you can do with it. Just release your creativity and go for it! Or just visit some vegan blogs and there you go:-)))

„My top tips are;
Get some recipe inspiration. If you just omit meat and dairy from your diet you’re going to get fed up pretty quickly. If the food you eat is delicious and nutritious plant based
eating will be an easy and happy way of eating forever.
In terms of inspiration there are some amazing plantbased chefs and bloggers out there; My New Roots, Anna Jones (delicious veggie food with vegan options), Oh She Glows,
Green Kitchen Stories, The First Mess etc. The great thing is that I don’t worry about fat or carbs or calories or any of the things were told we should worry about any more – If
you’re eating natural plant based ‚real‘ foods your health, energy, digestion, weight will all benefit.“

Marie:
“Here are three tips that have tremendously helped me in my pursuit of healthy eating. One is to plan for the week ahead. Choose a night (I like Sundays) to have a batch-cooking day and prepare a few meals for the week ahead. I’ll often bake a huge dish of baked oatmeal that will last about 5 days – this way breakfast is set for the week. Or I’ll make a curry stew with brown rice and save that for a few dinner or lunch meals.
Another tip is to start roasting your veggies. I hear people saying how veggies have no flavor but usually they’re just steaming veggies. Roasting brings out more depth in flavor and gives off an almost caramel note to the veggies. This is always my preferred way to eat veggies – roasted and topped with spices.
My last tip is to save the sweets for later. Baking healthy sweets can be expensive – often using dates or nut butters as the base. This is why I bake sweets maybe once a week and enjoy in small amounts. This way its light on my wallet and my stomach.”

Tiina:
“My first tip for anyone wanting to live more plant based is this: begin adding more vegetables and fruits to your diet in any way that is natural for you. I began my plant-based journey with smoothies, so I would definitely recommend starting with easy (green) smoothies to get a healthy dose of leafy greens, vegetables and fruits in your diet. As a starter plant-based meal I would recommend Buddha bowls, because they are so simple to make, and consist mostly of vegetables – only your imagination is the limit when making a nourishing bowl!

My second tip is to research (Instagram, blogs for inspiration) and start experimenting. This can mean anything from discovering alternatives to dairy (for example home made nut milks – more easy to make than it sounds!) to begin baking with plant based ingredients (using coconut oil instead of butter, chia seed eggs instead of eggs etc).

My third tip: if you feel overwhelmed by all the information and don’t know where to start, just make some NICE CREAM (blend frozen ripe bananas with some coconut milk, add anything you like: sweetener, berries, cacao powder) and remember to take it easy – there’s no need to stress about food. Take it one step at a time and enjoy the colorful (and yummy!) plant-based journey!”

How do you describe „plant based“?

Maya:
„I would say that my definition of a balanced plant based diet is little more extensive then just eating plants. What I think is very important is that we eat and cook according to seasons and mostly food that suits our climate. I emphasize here „mostly“ or as a base – something we eat every day. It is ok to make exceptions, but for example I wouldn’t recommend eating nicecream every day (especially during winter), or very often for those who live in Temperate and Mediterranean climate, like I do.

Now to explain my plantbased diet: I try to eat a lot of locally grown vegetables (at least 50% of the food I eat), smaller amount of fruits, a small amount of grains (that mostly rice, millet, oats and pseudo grains – quinoa, amaranth, teff and buckwheat), legumes, seeds and nuts, algae and fermented soy products (miso, shoyu, tempeh, tofu). The ways of cooking change depending on a season too. During winter I eat mostly cooked food (roasted, baked, fried, cooked and small amounts of raw) while in warm and hot parts of the year I enjoy the cooling food: mostly raw or shortly cooked food and lots of fruits, fruit juices, salads… This gives my body a needed balance and keeps me fit and healthy.“

Niki:
„I would describe my diet as plant based and it involves eating mainly plants; vegetables, fruit, pulses, grains, nuts and seeds etc basically eating natural organic seasonal food wherever possible. Luckily this way of eating feels very natural to me and is exactly the type of food I love to eat so that helps! And it makes me feel great.“

Marie:
„To me, plant based is simply taking fruits and vegetables and using them in creative ways. It doesn’t have to be complicated or make you feel confined to a certain style of food; instead it should help you to see vegetables in a new way. Turning a beet into a vibrant pink chia pudding or using sweet potatoes as a base for a twist on traditional tacos are great places to start. For me, it’s all about experiencing movement, color and taste through plant based foods.“

Tiina:
„Plant based for me means a healthy diet consisting mostly of plants: all kinds of (seasonal) vegetables, fruits, grains, legumes, nuts and seeds. In short plant based could be described as wholesome REAL food, which comes from the earth. It is not processed food, and it’s not produced in factories. An important aspect of plant based for me is not harming animals in any way.“

Interview Series – Part 2
Why and when have you decided to live „plant based“?

Tiina:
My son is allergic to dairy, and when he was a baby I began reducing my consumption of dairy too. I noticed I feel much better without dairy – lighter and happier. Around the same time in 2014, I also started eating less meat. I didn’t cut meat and dairy out of my diet all of a sudden, it was a more gradual process: I read about vegan diets, cut out red meat first, then fish, and last to go was cheese. In 2015 I began eating a wholesome plant based vegan diet.“

Marie:
I started to become curious about healthy food when my boyfriend suffered from 8 years of unexplained stomach pains. He left San Francisco to work abroad and I wanted another platform to connect with him while we were living in different countries. That’s when I started 8th and lake – mainly as a way to share with him delicious plant based recipes that would help his body. I became infatuated by real foods and found that plants taste good, like really good when cooked in spices and herbs. And not just that but cashews mixed with dates tastes like caramel – seriously caramel?! This has all been such a wonderful and unexpected experience.“

Maya:
I have always preferred plant food to any other, ever since my childhood. Could eat tons of fruits and veggies, raw and cooked. It felt good and natural to eat the plants, quite opposite to animal products. Even as a child I had trouble digesting meat and dairy, especially eggs. I could never eat convectional cakes without feeling sick the entire day after that. That’s why I had always been a weird kid that didn’t eat the birthday cake at parties… So my diet mostly consisted of plant food ever since my teens and the period in life when I decided to go plant based and to „purify“ my diet was during my pregnancy (16 years ago). In that time I couldn’t stand even a trace of animal products without getting sick. I had also been extremely disciplined during my pregnancy, eating only food that was beneficial for the baby. Haven’t had one piece of sweets during the whole 9 months (since I didn’t know then how to make healthy cakes and stuff;-)
Since then I educated myself in ways of Macrobiotic cooking and diet, and later vegan, and learned everything I needed to know to create a healthy and balanced plant based diet, for myself, my family and my students:-)“

Niki:
„I was a vegetarian for most of my teenage years and have never eaten red meat as I always disliked the taste even when I was little. Over the years I have eaten some fish and chicken but I’ve been plantbased for the last 18 months or so. After doing tons of research on the impact of a plant based diet on health, the environment and animal welfare my husband and I decided to go for it.“

Tiina:

“My favorite plant based meal is definitely a Buddha bowl: a nourishing bowl wholesale jerseys filled with rainbow colored vegetables, grains, plant-based sources of protein such as legumes or organic tofu, some healthy fats from avocado/nuts/seeds, and fermented foods (sauerkraut is my fav). “There’s so many! It will have to be curry dish as I really love spicy food. My favourites are usually packed with pulses and veg so that you get all the nutrients and protein you need.
