Smoked Tomatoe Risotto

  • 400g tinned tomatoes
  • 350g Risotto
  • 100ml white wine
  • 100g Brie cheese
  • 100g Parmesan
  • 100g Cream Cheese
  • Dried Tomatoes, basil and pine nuts to garnish
  • Smoking chips
  1. Drain the juice out of the tinned tomatoes, reserve the liquid
  2. Using a smoker, smoke the tomatoes together with the liquid for about 30 minutes or until its smoky
  3. Cook the Risotto with the smoked liquid
  4. Add the smoked tomatoes, add some cream, cheese and cook until its creamy and of a slightly consistency
  5. Plate and garnish with dried tomatoes, basil, parmesan. Add some pine nuts if you like
