Beetroot Burger with Tzatziki

Ingredients
  • make 12 patties
  • 400 g canned chickpeas
  • 2 red beets, grated
  • 2 tbsp olive oil
  • 3 onions
  • 2 garlic gloves
  • salt and pepper
  • 2 tsp tamari soy sauce
  • 50g chopped dill
  • For the Tzatziki

  • 250ml yoghurt (I use greek yoghurt)
  • 1 cucumber, peeled, deseeded and grated
  • 20g chopped dill
  • 1 garlic glove
  • salt and pepper
  • 1 tbsp olive oil
  • 2 Avocado, sliced
  • 12 Toasties
Instructions
  1. Preheat the oven 175 degrees
  2. Line a baking tray with baking paper, lightly brush with olive oil
  3. Mash the chickpeas (don't mash them completely)
  4. Fry onions and garlic for a few minutes until browning
  5. Stir in the beetroots and fry on low heat for 5 minutes
  6. Add tamari, dill, salt and pepper and set aside.
  7. Shape mixture into 12 cakes and set on baking tray
  8. Brush with olive oil
  9. Bake for 25-30 minutes
  10. Mix all ingredients for the tzatziki.
  11. Grill the toasties and staple the patty, avocado slices and tzatziki.
