Elderflower infused coconut mousse with strawberries

  • Serve 4
  • 50g chia seeds (black or white)
  • 200ml full-fat coconut milk (see note)
  • 2 tbsp elderflowers
  • 5 tbsp maple syrup
  • 1 tsp ground vanilla
  • pinch of salt
  • 8 strawberries
  • 1 tbsp maple syrup
  • coconut flakes
  1. In a large food processor process the elderflowers, coconut milk, maple syrup, ground vanilla and a pinch of sea salt until lightly incorporated.
  2. Add the chia seeds and stir around for a few minutes.
  3. Refrigerate overnight.
  4. To serve, toast a handful of coconut flakes in a skillet over medium heat until lightly browned. Careful – the flakes burns easily.
  5. Mash the strawberries and mix them with 1 tbsp maple syrup.
  6. Top the elderflower infused coconut chia mousse with the toasted coconut.
  7. Serve and enjoy!
  8. Note: Use full-fat coconut milk - this does not work with light coconut milk.
